Cheesy Mushroom & Spinach Omelette

This is one of my favorite omelettes! It's so simple but yet so satisfying at the same time. Whenever I have leftover veggies, I usually just throw them in a omelette or serve them on the side. Quick and easy breakfast that's ready in minutes!

  • 1 cup broccoli
  • 2 slices bacon, cut in half
  • 1 teaspoon butter
  • 1 cup spinach
  • 1/2 cup mushrooms, chopped
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 eggs, whisked
  • 2 tablespoons shredded cheddar cheese, divided


  1. Steam broccoli in the microwave for 5 minutes or until cooked through.
  2. Meanwhile, in a small skillet over medium-high heat cook bacon until crisp.
  3. In another small skillet, add butter over medium heat and let melt. Once melted, add spinach, mushrooms, salt, and pepper. Sauté until spinach is wilted and mushrooms are soft, about 3 minutes.
  4. Add whisked eggs to the spinach and mushroom mixture and cook, pushing eggs into the center until set around the edges. Flip one side over to form omelette.
  5. Remove pan from heat and top with 1 tablespoon cheddar cheese. Let it melt while preparing your plate.
  6. Add broccoli to your plate and top with remaining cheese. Slide omelette onto a plate and add bacon.


Enjoy with a hot cup of coffee!
