Keto Rice Pudding
This is a super filling, keto mock rice pudding that will satisfy any sweet tooth!
Low-Carb/Keto, Paleo/Dairy Free Option
For the Rice Pudding
8 oz. bag
(or coconut milk)
Perfect Keto Chocolate Collagen Powder
Legendary Foods Chocolate Peanut Butter
For the Toppings (optional)
sugar-free whipped cream
sugar-free chocolate chips
In a small saucepan, bring 1 cup of water to a boil.
Meanwhile, rinse and drain Miracle Rice thoroughly.
When water begins to boil. add miracle rice and cook for 3 minutes. Drain and return to a sauce pan on low heat.
Let any remaining water evaporate and then add heavy cream, protein powder, salt, and cinnamon and stir to combine.
Cook pudding over low heat for 5 to 10 minutes until it thickens, stirring often.
Divide rice into two servings and top with whipped cream, almonds, and chocolate chips. Enjoy!
