Keto Rice Pudding

This is a super filling, keto mock rice pudding that will satisfy any sweet tooth!

  • In a small saucepan, bring 1 cup of water to a boil.
  • Meanwhile, rinse and drain Miracle Rice thoroughly.
  • When water begins to boil. add miracle rice and cook for 3 minutes. Drain and return to a sauce pan on low heat.
  • Let any remaining water evaporate and then add heavy cream, protein powder, salt, and cinnamon and stir to combine.
  • Cook pudding over low heat for 5 to 10 minutes until it thickens, stirring often.
  • Divide rice into two servings and top with whipped cream, almonds, and chocolate chips. Enjoy!
